Fannie Gibson knew how to cook the foods of her native West Africa when she opened her restaurant nearly three years ago. Her mother and grandmother taught her to make dishes like jollof rice, banku with fish and waakye.
The rest of running a business was a challenge. She couldn’t get a loan and had no credit card. She knew little about customer service. Even the restaurant’s original name caused confusion.
